It is important to comply with food safety legislation to protect both your customers and your reputation.

In the unfortunate event that a food safety incident occurs within your business you will be required to demonstrate what is called 'due diligence'. This means being able to show that you took the appropriate level of care in relation to the potential risk of the task. Consistent and accurate records will be the best way to prove that you have taken due diligence.
